Job Description


We are looking for an experienced pro-Head Chef, who is well adverse in Food & Beverage administration & management to join our brand-new luxury River Camp on the lower Zambezi River in Zambia. Please note that this position is only open to Zambian citizens.

The ideal candidate should be a seasoned expert in the same position with specific experience working at 5* standards for establishments based in remote locations. Job brief

You will be the Head of the department, have creative input, and design unique and authentic menus. You should have a think-outside-the-box approach, a positive attitude, and an eye for detail.

Responsibilities include but are not limited to:

Control and direct the food preparation process and any other relative activities

Construct menus with new or existing culinary creations ensuring the variety and quality of the servings

Approve and “polish” dishes before they reach the customer

Inventory Management

Stock control

Plan orders of equipment or ingredients according to identified shortages

Arrange for repairs when necessary

Remedy any problems or defects

Be fully in charge of hiring, managing and training kitchen staff

Oversee the work of subordinates

Estimate staff’s workload and compensation

Maintain records of payroll and attendance

Comply with nutrition and sanitation regulations and safety standards

Foster a climate of cooperation and respect between co-workers

Requirements, experience and skills

Proven experience as Head Chef

Exceptional proven ability of kitchen management

Ability in dividing responsibilities and monitoring progress

Outstanding communication and leadership skills

Up-to-date with culinary trends and optimized kitchen processes

Good understanding of useful computer programs (MS Office, restaurant management software, POS)

Credentials in health and safety training

Degree in Culinary science or related certificate

General Skills include:

Excellent knowledge of all sections

Ability to produce excellent high-quality food

Good oral communication

Team management skills

High level of attention to detail

Good level of numeracy

Enthusiasm to develop your own skills and knowledge plus those around you

Adaptability to change and willingness to embrace new ideas and processes

Ability to work unsupervised and deliver quality work

Positive and approachable manner

Qualifications & Experience

City & Guilds 706/1 | 706/2 Catering is a distinct advantage

NVQ Level 3

Level 1,2 and 3 Food Safety Awards

Level 2 Health and Safety in the Workplace Award

Minimum 4 years relevant experience

Awareness of manual handling techniques

Awareness of Control of Substances Hazardous to Health Regulations (COSHH) and chemical safety

Experience of kitchen equipment

Experience of dangerous equipment such as knives

Competent level of English spoken and written
